Service and Kitchen Workshop

In the first year of the Bachelor Degree International Hospitality Management of Vatel Malaga, the students do a Kitchen and service workshop in a hotel, in order prepare for their first internships in the F&B Departament of a hotel.

In the first year of the Bachelor Degree International Hospitality Management in spanish and english of Vatel Malaga, the students do a Kitchen and service workshop in a hotel, in order prepare for their first internships in the F&B Departament of a hotel.


This year service and kitchen workshop took place in the NH Malaga Hotel, this real experience helps our students understand the area of the day-to-day job in the Hospitality Business.


SERVICE WORKSHOP

They students have practiced the formal and informal set up of a table, the different types of services, such as American, English, French and Russian. 


The importance of the gueridon. How to serve the table, the wine, how to order a table, and the balance of the tray among other activities.

They learned how to fold the napkins which develops creativity in their working environment. 


We also made a "play a long" activity in which our students on line and in presence had different roles like being a customer,  the host, the server, the maître.This workshop is a great example to make the theory a reality in their studies.

KITCHEN WORKSHOP

In the kitchen workshop, they learned about the Mise en place of your station, cutting a chicken and do with the bones a chicken brown, cutting a round fish and a Flat fish and apply the correct knife and cutting technique to filet, cutting Vegetables in diced for the Ratatouille, mirepoix for the stock and potatoes batonet to be fried.


The dishes the students cooked in the workshop, by the bachelor in english are the following:

Pan seared chicken brest airline cut; roasted juicy sauce

Fish tartare with sweet and sour vegetables with poached eggs

Ratatouille povençale ;fried Potatoes batonnet ( Potatoes Matchestick)

Dark chocolate mousse, banana frambee crumbl
